Sal’s summer dhal

Summer one-pot dhal

In this simple one-pot dhal, cumin-softened onion infuses with fresh vine-tomatoes: all in just 30 minutes

Ingredients for 4 servings

AmountIngredient
1 400g punnetCherry tomatoes on vine
¾ cupRed lentils
3 TspsNigella (black onion) seeds
1 mediumOnion, chopped finely
1 cupBoiling water
2 TspsGround cumin
1 TspGround coriander
1 TbspOil of your choice
½ cupLemon juice
½ Tsp (optional)Sea salt

Steps

1. Preheat the oven to 200° or gas 7
Meanwhile, tip the cherry tomatoes (still on their vines) into a roasting pan, then add the lentils, nigella seeds, boiling water and salt (if using). Make sure all the vines are submerged in the water - if not, cut the vines apart - separating the tomatoes
2. In a bowl, toss the onion in the oil, cumin and coriander, then scatter over the tomato-lentil mixture
Cover with a lid or tightly scrunch a double layer of foil over your tin - or the lentils won't cook. Then pop back in the over for 30 mins
3. After 30 mins, remove the vines, then give the dhal a vigorous stir
If you can wait, let it sit for 10 mins to thicken, then add lemon juice to taste and serve.
